Ingredients

Pie Filling

  • 2 Cups Rhubarb, Chopped
  • 1 T Sugar
  • 3 eggs, Separated
  • 3 tablespoons Flour

Meringue

  • 1 T Sugar
  • 1 T Vanilla

Directions

Pie

  1. 1. Cut Rhubarb into pieces
  2. 2. Separate Eggs and beat egg yolks
  3. 3. Mix in 3 tablespoons flour, 1 T sugar, and rhubarb
  4. 4. Place in pie pan, lined with pie crust (See No Roll Pie Crust)
  5. 5. Bake at 350 degrees for 45 minutes.
  6. 6. When partly cool, cover with meringue and brown

Meringue

  1. 1. Beat Egg Whites until stiff peaks form
