Pumpkin Pie a la Easy
Pumpkin Pie is good!

Ingredients
Pecan Crust
- 1 1/4 Cup all purpose Flour
- 3/4 Cup Oats (quick or old fashioned)
- 1/2 Cup Brown Sugar
- 1/2 Cup Pecans, chopped
- 1/3 Cup Water
- 1/3 Cup Oil
Filling
- 2 Eggs
- 1 can (15 oz) solid packed Pumpkin
- 1 Can (14 oz) Sweetened Condensed Milk (can substitute 1 1/2 cups sugar + evaporated milk)
- 3 1/2 Teaspoons Pumpkin Pie Spice
Directions
Crust
- 1. Preheat oven to 350 degrees.
- 2. Combine Flour, Oats, 1/2 Cup Brown Sugar and Pecans. Add 1/3 Cup Oil and 1/3 Cup Water. Mix thoroughly.
- 3. Press into bottom and sides of pan.
- 4. Bake for 15 minutes.
Filling
- 1. Lightly beat 2 Eggs then add the Pumpkin, Sweetened Condensed Milk and 3 1/2 Teaspoons Pumpkin Pie Spice and mix until smooth.
- 2. Pour over baked crust.
- 3. Bake for 45 minutes or until filling is set and knife inserted in the center comes out clean.
